We came across these thrilling wines whilst on our travels, as has often been the case. We love Chablis, and have been on the hunt for the ‘right’ producer for many years, and these wonderful, structured wines have made our wait worth it. Edouard (French) and Eleni (Greek/German) met while working the 2010 harvest in New Zealand. He comes from a well established Chablis family – Vocoret et fils – and in 2012 was gifted just under five hectares of vines to establish his own domaine, together with Eleni who’d worked as assistant winemaker with Chablis legend Vincent Dauvissat. Edouard’s father took off five hectares that were run by the family. 4.5 ha in Chablis, and 0.3 ha of premier cru (Butteaux).

All the plots are worked the same way, and treated the same in the cellar. Non – certified organic farming,  everything is picked by hand (into 300 or 500 kg bins) and pressed whole bunch. Alcoholic and malolactic fermentation is in tank, for 6 months. Then they move the vintage already in barrel to tank, and move the new vintage into barrel for a year. Going against the norm of blending in the Chablis AOC, their different plots, exhibiting differing soils and expositions, express their terroir on a individual level, and therefore they bottle each as its own cuvée. Its exciting to be representing these ‘new faces’ of Chablis, bringing dynamism and a new way of looking at the region. Their wines exhibit their own dynamism, with a wonderful classic edge. Furthermore, they will be taking over more family vineyards, so watch for the Grand Crus down the line…
